Doughnuts

Doughnuts are a popular fried confectionery that is eaten as a dessert or as an accompaniment with beverages such as Vietnamese Iced Coffee. Across the world, I have seen Doughnuts being relished by people on the go on several occasions.

These are available in various flavours such as chocolate, blueberries, vanilla, maple et al and they are available in supermarkets, bakeries, food joints and almost everywhere these days. But, as I love trying different recipes, I felt like preparing them from scratch! And my homemade Doughnuts totally won 10 on 10 from my kid!

The recipe that I have used has always given me wonderful results, so decided to stick to it. They turned out delicious. Much better than those overpriced and over hyped outlets and that too at a fraction of cost. This recipe is a must try if you and your kids would love them. Ingredients 

For the doughnut

  • 2 & ¼ teaspoon Instant yeast
  • 1 cup Warm milk
  • 3 cups All purpose flour
  • ¼ cup Sugar
  • 1 Egg
  • ¼ teaspoon Salt
  • ¼ teaspoon Nutmeg powder
  • 2 tablespoon Unsalted butter (melted)
  • ½ teaspoon Vanilla extract
  • Vegetable oil for frying

For the glaze

  • 60 gms Milk chocolate
  • 60 gms Butter
  • 2 tablespoon Fresh cream
  • 1 cup Confectioner's sugar
  • ½ teaspoon Vanilla extract
  • Sprinkles to garnish

Instructions

For the doughnuts

  • Mix all the ingredients of doughnut in a bowl.
  • Mix with a wooden spoon till everything comes together.
  • Take out the dough on a lightly floured surface and knead for 10-12 minutes or if using a stand mixer, knead at medium speed for 6-7 minutes.
  • Lightly oil a bowl and transfer the dough in it.
  • Keep the bowl in a warm place for 2 hours till the dough doubles in size.
  • Gently punch the dough and take it out on a lightly floured work surface.
  • Roll the dough to ¼ inch thickness.
  • Cut the doughnuts. (I used a big cookie cutter and cap of a bottle to cut)
  • Keep the doughnuts on a baking sheet leaving a gap of ½ inch between them.
  • Cover the sheet with a kitchen towel and let the doughnuts rise for another hour till they double in size.
  • Heat oil in a big vessel.
  • When the oil is hot (approx 180 degree C), place the doughnuts in it and fry from both the sides till lightly browned. Do not over fry the doughnuts or they will become dry
  • Drain on a kitchen towel lined tray.

For the glaze

  • Melt chocolate and butter in a pan.
  • Cool for 5 minutes.
  • Add confectioner’s sugar, vanilla extract and cream and mix well.
  • Dip the doughnuts in the glaze and sprinkle the sprinklers on top.
