Plums and peaches and mangoes and cherries, they the best fruits that are available during summers. You wait for the entire year to devour these juicy and flavorful fruits and within no time, the season is gone and you keep longing for more.
Last year I planned to make a few cakes and cobblers with stone fruits and by the time I could decide and settle down with a recipe, it was almost time for the stone fruits to disappear. So this year, I did all my search and planning before hand and now I am all set with quite a few recipes using stone fruits to try my hands on.
The first recipe that I made today is an Upside Down Plum Cake. If you trust me enough, please try this cake. This is one of the best cakes I have made in my baking journey. It's buttery and spongy with a little tartness from the plums in every bite.
Stone Fruits or berries are best to use when they are naturally available. If you're a fan of them, then Strawberry Cake and Cranberry and Orange Bread could interest you.
During our BFF party, I had baked Upside Down Plum Cake for my girl gang, they loved it so much that I had to pack some for each one of them, ha! While fresh plums are available, do plan on baking this delicious Upside Down Plum Cake after reading its recipe:

Upside Down Plum Cake is delicious and moist cake made with plums

Ingredients
For the topping
- 50 gms Unsalted butter
- 1/2 cup Brown sugar
- 3 tsp Mix fruit jam or any jam of your choice
- 1/2 kg Plums seeds removed and cut into slices
For the cake
- 1 cup All purpose flour
- 1/2 cup Almond flour
- 1 tsp Baking powder
- 1/4 tsp Baking soda
- 1/4 tsp Salt
- 100 gms Unsalted butter
- 1 cup Sugar
- 2 Eggs
- 1/2 cup Yogurt
- 1 tsp Vanilla extract
Instructions
- Grease and line an 8 inch pan
- In a pan, heat butter, sugar and jam
- Cook on low heat till sugar has dissolved and jam has melted
- Pour the topping in the prepared pan
- Let it cool completely
- When it is completely cooled, arrange the plum slices on top
For the cake
- Pre heat the oven to 180 degrees C
- Mix all purpose flour, almond flour, baking powder, baking soda and salt in a bowl
- Beat sugar and butter in a bowl till light and fluffy
- Add eggs and beat well
- Add yogurt and vanilla extract and beat for half minute
- Add flour gradually and mix till combined
- Pour the batter over the plums and bake for 40-45 minutes, until a knife comes out clean
- Remove from the oven and cool for 5 minute in the pan
- Remove from the pan
- Dust with powdered sugar
- Serve warm
