No wonder that by the time we get the tea it is already more than six months old. Whenever I visit the tea gardens on my vacations and travels, I for sure pick up the fresh tea from the factory shops. The taste and aroma of fresh tea is so much different to a packaged tea.

The tea has fiery flavours of spices including ginger, red peppers, cardamom and black peppers. The poached pears come out with a perfect dark reddish brown colour and combines amazingly well with Kesar Rabdi. This recipe is simple to make and is going to be a winner this festive season. Ingredients
- 3-4 Pears
- 3 tsp Tea Box Spice Sparkler Tea
- 1 stick Cinnamon
- 1 tsp Ginger Grated
- 1/2 cup Sugar
- 4 tsp Lemon Juice
- 1 Bay Leaf
- 1/4 cup Kesar Rabdi
- 1/4 cup Milk
- Almond and pistachio slivers for garnishing
Instructions
- Add Kesar rabdi and milk in a blender and blend to make a smooth sauce.
- Refrigerate the sauce for a few hours.
- Peel the pears carefully, leaving the stalk intact.
- Cut a straight slice off the bottom, so that they can stand upright.
- Heat 4 cups of water in a pan.
- Once the water comes to almost boiling point, switch off the heat.
- Add the Tea Box Spice Sparkler Tea leaves in the water.
- Let the tea steep for a two minutes.
- Strain the tea and add it in a pan.
- Add cinnamon stick, ginger, sugar, lemon juice and bay leaf in the pan along with the tea.
- Bring the mixture to a boil.
- Add pears to the pan on their sides.
- Simmer the heat and cook the pears for 30-40 minutes turning them at regular intervals.
- Take the pan, off the heat.
- Cool it down.
- Remove the pears from the pan, using a slotted spoon.
- Keep the pan on heat again and cook till the mixture is reduced to a syrupy consistency.
- When serving, pour some rabdi sauce in the serving plate.
- Keep a pear on top of it.
- Drizzle some reduced Tea sauce on top.
- Garnish with slivered almonds and pistachios.
- Serve chilled.
