What is Sama ke Chawal?
Sama ke chawal is a gluten-free grain from the millet family.
It's called barnyard millet in english, bhagar, varai, samo chawal, samvat ke chaval, moriyo, kodri etc in various Indian languages.
This grain can be had for Indian Vrat on occasions like Navratri, Janamashtami etc and is easily available in any Indian grocery store.

What is Sama Ki Katli?
It is a savoury barfi made using sama chawal flour. I got the flour from a local store and it's easily available these days.
If you don't get it in-store near you, you can also order it online on Amazon.
This katli tastes delicious and can be had for Vrat.
Process
To make sama ki katli, sama rice flour is mixed with curd and water and is left to ferment for a few hours.
It is then cooked until it becomes thick and starts to leave the sides of the pan.
The mixture is then pressed on a plate and left to set. It is then cut into cubes and shallow fried in ghee to give it a nice crust.

Step by Step Recipe
Mix Sama Chawal flour, boiled potato and curd in a bowl and keep aside for 30 minutes.
Heat ghee in a pan.
Once the ghee is hot, add cumin seeds, chilli and ginger and fry for a minute.
Add the flour and curd mixture, water and salt.
Cook for 10-12 minutes on medium-low heat until the mixture starts to leave the sides of the pan. Keep stirring continuously.
Grease a plate with ghee and transfer the mixture in the greased plate. Spread the mixture evenly on the plate and keep aside for 15 minutes to set. Invert the plate and remove the katli from the plate. Cut into the desired shape.
Heat ghee on a tawa and fry the katli until golden brown from both the sides.

- 1 cup Sama Rice Flour
- 1 cup Curd
- 1/2 cup Boiled Potatoes Grated
- 1 cup Water
- 1 tsp Ghee
- 1 tsp Cumin Seeds
- 2 tsp Green Chilli Chopped
- 1 tsp Ginger Grated
- Salt to taste
- 2 tbsp Green Coriander Chopped
Instructions
- Mix Sama Chawal flour, boiled potato and curd in a bowl and keep aside for 30 minutes.
- Heat ghee in a pan.
- Once the ghee is hot, add cumin seeds, chilli and ginger and fry for a minute.
- Add the flour and curd mixture, water and salt.
