Also known as sago, tapioca, sabudana is full of carbohydrates. As sabudana is extracted from the stem of sago palm it is popularly referred as sago pearls.
Sabudana not only bolsters smoother digestion, but they even improve the health of bones. Moreover, sabudana can even cure hypertension, it fights birth defects and controls blood pressure.
Owing to these benefits, I make sure that I use sabudana while making snacks or breakfast. And, on the fifth day of Navratri, I am elated to present this recipe of Sabudana Vada Pancakes with you all.
Sabudana Vada Pancakes is a fusion of Indian with a Western twist. Both kids and adults feel happy when something new is served to them and Sabudana Vada Pancakes do just the same.

Ingredients

  • 1/2 cup Sabudana
  • 1 cup Potato Boiled and Grated
  • 1 cup Rajgiri Flour
  • 2 tbsp Coriander Chopped
  • 2 tsp Green Chilli Chopped
  • 1 tsp Dry Mango Powder
  • Salt to taste
  • Ghee for Brushing
  • Roasted Peanuts for sprinkling on top

Instructions

  1. Wash the sabudana once and then soak it in just enough water to cover it for 5-6 hours.
  2. Add the soaked sabudana in a bowl along with the remaining ingredients and mix well.
  3. Add little water if required to make a soft mixture.
  4. Heat a pan.
  5. Brush the pan with ghee.
  6. Spread 2 tbsp of the mixture on the plate evenly.
  7. Pour some more ghee on top and sides while cooking to make a crunchier pancake.
  8. Flip and cook from other side also.
  9. Sprinkle crushed roasted peanuts on top.
  10. Serve hot with Vrat wali Dhanya Ki Chutney.
