In Sanskrit, 'Navratri' roughly means 'nine nights', 'nava' translates to 'nine' and 'ratri' means 'night'. Navratri celebrates and worships goddess like Durga, Amba.
Along with this worship, in states like Gujarat even Garba ( a folk dance in Gujarat) is performed in order to cherish the existence of various goddess in our lives. And in Bengal, Durga Puja is organized in the name of Goddess Durga as well.
In total, Navratri is a festival which is waited for across India. Not only does it bring positivity and joy in our lives but it even restores our faith in the concept of 'shakti' or strength of women. Trust me, having witnessed the celebrations in various states of India like Rajasthan, Gujarat, North India, Navratri makes me reconnect with my truer self. Like many people in India, whenever it is possible, even I fast for nine days.
Fasting during Navratri is considered to be very auspicious and having adhered to them, I have never felt hungry despite eating light, Falhari food only once in a day, probably that's the strength that you get from the goddesses? For making these quickies, all you need to do is mix mashed, boiled potatoes along with paneer, coarse roasted makhana with coriander, green chilli and salt and deep fry them. In order to make Makhana Paneer Ball crispier, add a pinch of Rajgiri ka Atta as it is sure to grant a decadent texture to this snack.

Ingredients
- 1 cup Paneer Grated
- 1/2 cup Potato Grated
- 1/4 cup Rajgiri Ka Atta / Amaranth Flour
- 1 cup Makhana / Foxnut
- 2 tbsp Ghee
- 2 tbsp Fresh Coriander Chopped
- 2 tsp Green Chilli Chopped
- Salt to taste
- Ghee or oil for frying
Instructions
- Heat ghee in a pan.
- Once the ghee is hot, add makhana and fry until they are crisp.
- Crush the makhana using a rolling pin to a coarse texture.
- Mix paneer, boiled potato, rajgiri ka atta, crushed roasted makhana, coriander, chilli and salt in a bowl.
- Make small balls from the mixture.
- Heat ghee or oil for frying in a pan.
- Deep fry the balls until they are golden brown.
- Serve hot.
