Ingredients

  • 1 tsp Butter
  • 1 tsp Olive oil
  • 1 tsp Garlic Crushed
  • 1/2 cup Spring onions Both green and white parts, Chopped
  • 1/2 cup Potato Boiled and grated
  • Salt To taste
  • 1/2 tsp Black pepper Freshly ground

Instructions

  1. Heat butter and olive oil in a pan.
  2. Once the oil is hot, add garlic and fry for a few seconds.
  3. Add spring onions and boiled potatoes and saute for 2-3 minutes.
  4. Add vegetable stock and bring the mixture to a boil.
  5. Cook the soup on low heat for 4-5 minutes.
  6. Blend the soup in a blender and return to the pan.
  7. Add salt and pepper and cook for a minute.
  8. Serve hot.
