Custard Apple Rabdi or Sitaphal Rabdi is a traditional Indian dessert made with fresh custard apple. This fruit is a storehouse of anti-oxidants and nutrients and lends its own sweetness and taste to this dessert.
Rabdi is a commonly prepared sweet that is a perfect combination of thickened milk and sugar, flavored with cardamom and dry fruits. The trick to making great rabdi is to constantly scrape the sides of the vessels during preparation, so that it doesn't burn. This gives the rabdi its consistency and texture. Because it is time intensive, I make it rarely, but nevertheless it's always worth the wait.

Ingredients
- Full cream milk - 1 litre
- Sugar - 2 tsp
- Cardamom powder - 1 tsp
- Custard Apple - 2-3
- Almond and Pistachio slivers for garnishing
- Dried rose petals for garnishing
Instructions
- Heat milk in a heavy bottom pan.
- When it comes to a boil, simmer the heat.
- Let it simmer till it is reduced to ½.
- Add sugar and cardamom powder.
- Cook till it thickens a little bit more.
- Remove the rabdi from heat.
- Let it cool.
- Peel and deseed the custard apple and add them to the cooled rabdi.
- Mix well.
- Garnish with almond and pistachio slivers and dried rose petals.
- Chill in the refrigerator for 3-4 hours.
- Serve chilled.
