Summer in Bangalore was never this ruthless. I remember those breezy summer evenings so well! Alas, since last few years, summer happens to take quite a toll on us. In order to beat the heat, I always look forward to preparing natural coolers which we could sip throughout the day.
Cucumber Buttermilk is one such cooler which we all really love to relish, anytime and any day. I prefer making Cucumber Buttermilk over Spiced Buttermilk as it has the goodness of both cucumber and curd. If you are a fan of beetroot or chukandar then Beetroot Buttermilk has to be in your food diary!
For making Cucumber Buttermilk one just needs a few ingredients. Apart from adding cucumber to enhance the flavor of this cooler, I have even used ginger and green chilli. The tempering of mustard seeds and curry leaves gives a very distinctive flavor to the buttermilk and it is loved by all at my home.
I like to drink chilled Cucumber Buttermilk, so apart from cooling it for a few hours in the refrigerator, I also add a few ice cubes in it. Ingredients
- 2 cups Fresh curd
- 2-3 cups Water
- 1/2 tsp Ginger Julienned
- 1/2 tsp Green chilli Finely chopped
- 1/2 cup Cucumber Cut into small pieces
- Salt to taste
- Ice cubes
For tempering
- 1 tsp Vegetable oil
- 1/2 tsp Cumin seeds
- 1/2 tsp Mustard seeds
- 10-12 Curry leaves
Instructions
- Whisk curd in a bowl until smooth and creamy.
- Add water, ginger, green chilli, cucumber and salt in the curd and mix well.
- Heat oil in a pan.
- Once the oil is hot, add cumin seeds and mustard seeds and let them crackle for a few seconds.
- Add curry leaves and fry for a few seconds.
- Pour the tempering over the buttermilk and mix well.
- Add ice cubes in glasses and pour the buttermilk on top.
- Serve chilled.
