Having tasted a beetroot based salad- Balsamic Beet Salad, at one of the meet greets, I got all keen for trying it at home.
I personally like eating beetroot a lot and it was one of the reasons why Beetroot Hummus, Beetroot Halwa are some of the dishes that I always look forward to preparing.

This Salad is an interesting recipe that you can prepare if you are a beetroot fan just like me.

Variations
Instead of boiling the beet as suggested in this recipe, you can roast them too. Balsamic Roasted Beet and Arugula Salad is a hit in my house too.
You can also do a beet salad with maple balsamic vinaigrette or a balsamic beet and berry salad.

Balsamic Beet Salad Recipe

Ingredients
- 2-3 Beet Root Cut into half
- 1 tbsp Balsamic Vinegar
- 1 tsp Extra Virgin Olive Oil
- Salt to taste
- 1/4 tsp Black Pepper Freshly Cracked
- 2 cups Salad Greens
- 1 tbsp Walnuts Chopped
- 30 g Feta Cheese
Instructions
- Heat water in a pan.
- Once the water comes to a boil, add the beetroot and cook until they are tender.
- Drain the water.
- Remove the skin of the beetroot and cut them into thin slices.
- Mix Extra virgin olive oil, balsamic vinegar, salt and pepper in a pan and cook for a minute.
- Add the beetroot in the dressing and cook for a minute.
- Remove the pan from heat and let the beet root cool down.
- Transfer the beetroot into a serving bowl and mix with salad greens, walnuts and feta cheese.
- Serve .
Recipe Notes
You can roast the beet instead of boiling if you wish.
