Made from Masoor and ripe Avocados, Avocado Lentil Salad can be granted a more soothing flavour by an addition of fresh greens and orange wedges. As I always believe in eating salads with my meals, I feel they can be made healthy as well as delicious by tossing them along with a proper dressing.
That's why for Avocado Lentil Salad, I made sure to use a refreshing dressing as well. Just a pinch of orange zest, a dash of lemon juice, virgin olive oil, orange juice and some freshly cracked black pepper, was all I needed to make the dressing for Avocado Lentil Salad.

Ingredients
- 1/2 cup Masoor Dal / Red Gram
- 1 Ripe Avocado Peeled and Cubed
- 1 cup Salad greens I used lettuce
- 1 Orange Cut into wedges
For the dressing
- 2 tbsp Extra virgin olive oil
- 2 tbsp Orange juice
- 1 tbsp Lemon juice
- 1 tsp Orange zest
- Salt to taste
- 1/4 tsp Freshly cracked black pepper
Instructions
- Wash the lentil and add it in a pressure cooker along with some salt and 1 cup of water.
- Pressure cook until the lentil is done.
- Drain the lentil and let it cool.
- Add cooked lentil in a bowl along with avocado, salad greens and orange in a bowl and mix.
- Add all the ingredients for dressing in a bowl and mix well.
- Pour the dressing over the salad and mix gently.
- Serve immediately.
