I am trying to use cucumber as often as possible this season. Recently, I made an energizing Cucumber and Mint Cooler which turned out to be quite lip-smacking.
For our exclusive BFF brunch, I made creamy Cucumber and Mint Raita and guess what, my best friends loved it as well.
I am planning to serve them Asian Basil Cucumber Salad or Cucumber Salad Recipe soon because it is just as scrumptious!
We like this Salad more for the fact that its dressing is very fine and subtle. I have used vegetable oil, lemon juice, rice vinegar, fish sauce, and chilli flakes to balance all the flavors.
Additionally, it has this nice crunch and flavors of cucumber, basil. During Summer, especially, when I and my family wish to stay away from heavy meals, this salad fits in our diet plan.
Cucumber helps in flushing out toxins, it helps in weight loss as well.
Moreover, it cleanses our eyes, combats cancer and keeps us hydrated throughout the day.

Step by Step Recipe
Add cucumber, red onion and Thai basil in a bowl.
Mix all the ingredients to make the dressing in another bowl.
Pour the dressing over the cucumber salad and mix well. Serve immediately.

Ingredients
- 300 g Cucumber Julienned
- 1/4 cup Onion Thinly Sliced
- 10-12 Basil Roughly Torn
For the dressing
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- 1 tbsp Rice Vinegar
- 1 tsp Fish sauce Optional
- 1 tsp Chilli Flakes
- 1/2 tsp Salt
- 1 tsp Honey
Instructions
- Add cucumber, red onion and thai basil in a bowl.
- Mix all the ingredients to make dressing in another bowl.
- Pour the dressing over the cucumber salad and mix well.
- Serve immediately.
Recipe Notes
You can make the salad and dressing ahead of serving but mix both only when ready to serve.
