Once the ghee is hot, add cloves, green cardamom and cinnamon stick and fry for a few seconds.

Ingredients

  • 1 cup Long Grain Basmati Rice
  • 1 tbsp Ghee
  • 2-3 Cloves
  • 2-3 Green Cardamom
  • 1 inch Cinnamon
  • 1/2 cup Onion Thinly Sliced
  • 1 tsp Ginger Garlic Paste
  • 1 tbsp Achari Masala
  • Salt to taste
  • 1/4 cup Beans Cut into small pieces
  • 1/4 cup Carrot Cubed
  • 1/4 cup Peas
  • 1/2 cup Cauliflower Cut into small florets
  • 1/4 cup Potato Peeled and cubed
  • 2 tbsp Masala from Mango Pickle

Instructions

  1. Wash the rice and soak in enough water for 30 minutes.
  2. Heat ghee in a pan.
  3. Once the ghee is hot, add cloves, green cardamom and cinnamon stick and fry for a few seconds.
  4. Add onion and fry until slightly browned.
  5. Add ginger garlic paste and fry for another minute.
  6. Now add achari masala, salt and vegetables and cook for 2-3 minutes.
  7. Add masala from mango pickle.
  8. Drain the rice and add in the pan.
  9. Add 2 cups of water.
  10. Cover and cook on low heat until rice is done.
  11. Remove the pan from heat.
  12. Fluff the rice gently using a fork.
  13. Serve hot with any raita.

Recipe Notes

You can also use masala from red chilli pickle instead of mango pickle for a taste change.
